SeaHawks vs. Broncos. A night to scream at the tv, and eat whatever you want. Well, who are we to break tradition? Doesn't mean we can't do it while staying paleo. So, what's on the menu you ask? We're having wings, fries, and soft pretzels. These served with an Angry Orchard in hand.
Baked Hot Wings

- 1 pound chicken wings (you'll have to cut off that funky tip. bluck!)
- 4 tablespoons unsalted butter
- 1/3 cup Louisiana style hot sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
Directions
- Preheat oven to 425°F.
- Season chicken with 1/2 teaspoon of salt then arrange onto a cooling rack that has been placed inside a baking sheet; bake 20-25 minutes or until the internal temperature reaches 165 degrees F.
- Meanwhile, melt butter in a small saucepan over medium heat then add hot sauce, garlic powder and 1/4 teaspoon of salt.
- Toss cooked chicken in sauce and serve
Herb Sweet Potato Fries

- 3 sweet potatoes, scrubbed and rinsed
- 3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme (chopped finely)
- 1/2 teaspoon paprika
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon salt
- Preheat oven to 425°F.
- Cut the potatoes in half lengthwise, then cut each half into wedges.
- Place the potatoes and ingredients into a bowl and toss until well mixed.
- Place evenly on foil lined baking sheet.
- Bake for 25 minutes, or until potatoes are brown and tender.
There are arguments about how paleo "paleo baked goods" are. We are in the "it's cool once in a while" camp. We don't make gluten free bread to have sandwiches, but I won't say no to a slice of birthday cake made with coconut flour (or almond flour).
Grain Free Soft Pretzels

- 3 Tablespoons of a single whisked egg
- 1/3 cup applesauce
- 1/2 cup coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 Tablespoon minced garlic
- Preheat oven to 400°F. Get out your baking sheet and line with foil.
- The best investment we ever made was in our KitchenAid Mixer. Don't have one? Get one! It's worth every penny. Anyway, mix together the egg, applesauce, minced garlic, and salt. Add in remaining dry ingredients and stir until completely combined.
- Now for the work. Usually you would take your dough and knead on a space with flour, but coconut flour is extremely absorbent and can kill whatever you're making. So, take your dough and place on some parchment paper, knead until it comes together well. Using a sharp knife, cut the dough into four equal parts.
- To form the pretzels, roll one of the balls of dough into a long thin rope. Put the two ends of the rope next to each other to form a tight U shape. Twist the ends together once so the twist is about half way down the U. Bring the two loose ends down to the loop at the bottom below the twist. Tuck the two ends under the loop and press so the dough adheres to itself. Gently pull the pretzel so the dough becomes thinner and the pretzel becomes larger to form a nicely sized pretzel.
- As for other shapes, you can bake the ropes for pretzels sticks, knot the ropes for pretzel knots, cut the ropes into little equal sized pieces for pretzel bites, or roll the dough into balls and scour the top for pretzel rolls.
- Lay the pretzels on the prepared baking sheet and brush with egg white (this helps the toppings stick). Dip the pretzels in as much salt as you desire and place back on the baking sheet. Bake for 15-20 minutes, or until firm and slightly golden, then broil for 30 seconds or until golden
