My name is Monique, and I'm a sugar addict. I guess it's hard to get to a size 18/20 without having some sort of addiction though right? So, with this Paleo living I've made myself a deal that every third day I'm "allowed" a dessert.
Oh, another addiction I have...self sabotage. I have this thing where if I screw up on a diet during the day I figure the rest of the day is a free for all. Horrible right? Lord knows I'm not the only one with that habit.
Anyway, let me explain why I decided on the "third day rule". Day one of I'm eating healthy is a sinch. I'm motivated, and waking up to a new outlook of life. Day two starts with okay, I've got this, and progresses into brussel sprouts...eh. What I'm currently learning is if I tell myself on day two that I only need to make it to tomorrow and then I can have a little sugar (aka: something sweetened with a natural product such as honey), I'm golden. I admire people who do the 21 Day Sugar Detox. Really I do, but I'm not there yet. Baby steps.

No Crust Cheesecake... single portion!

What you'll need:
2, 8-ounce packages cream cheese (Easier to mix if at room temperature)
1/2 C honey (We have a honey guy, cutest old man. The taste is unreplaceable, the price is remarkable and the benefits are a plus).
1 1/2 tsp vanilla extract
1/2 C sour cream
2 eggs
4, 8oz jars/ramekins or 9, 4oz containers

Directions:
- Preheat oven to 325 degrees.
- Bust out your KitchenAid. You're going to start by mixing the cream cheese, honey, and vanilla until it's no longer stiff.
- Add in your sour cream.
- Once blended, you're going to add in the eggs one at a time (Really, this can be done by hand since you don't want to overly mix, but the mixer works just as well).
5. Place jars/ramekins in appropriate sized baking dishes to fit them, and enough warm water to the cover half of the outside of the jars. I needed two.
6. Finally, pour batter evenly into jars (in my case I used 4 8oz ramekins, and filled to the 4oz line. If you were using the 4oz jars, make sure to leave 1/4" from the top to avoid overflow).

7. Bake 25 minutes or until centers are almost set.
