What a long week! What?! It's only Tuesday!
Recovering from the grain filled, sleep deprived weekend has brought about a lot of discoveries. I think this is the first time that after eating crummy food that I'm not sort of looking forward to my next "celebration". Before Monday I had been planning my birthday feast: cheese paczki (I think that is the singular and plural, because I'm not just going to eat one!), Totino's Party Pizzas and some other really unhealthy food. (Although I think there is no way to produce, package, ship and distribute a pizza for $1.19 made out of anything remotely resembling food.) It took all of Sunday, Monday and half of Tuesday for me to start feeling good and my head to stop pounding, so I'm going to be rethinking my birthday menu!
I'm also starting to rethink my sleep pattern. I'm naturally a night owl (really, I took the test which is "widely considered to be just as accurate as the genetic test") so while I am pretty good about following "The Plan", on the weekend, all bets are off. Friday and Saturday I'm up way too late and sleeping in on Saturday and Sunday mornings then wonder at 9:45 on Sunday why I can't fall asleep and am tired on Monday. So I've decided to try to not change my sleep pattern by more than a hour on the weekends. So asleep by 10:45, awake by 7ish. Seven on a weekend! Yuck!
Anyway, breakfast cookies! There were supposed to have raisins, but I HATE cooked raisins so we switched them out for craisins. They really aren't that sweet so try some of the dough and see if it works for you. I liked them and so did dessert obsessed Monique!

Coconut Craisin Breakfast Cookies
Makes 25 cookies
Difficulty: Super Simple
INGREDIENTS
2 cups of shredded coconut (the unsweetened stuff)
3ish TBSP craisins (or raisins if you into that)

1/3 cup of almond butter
1/2 cup unsweetened apple sauce
2 eggs
1 tsp cinnamon
1 teaspoon vanilla extract
pinch of salt

1.) Preheat oven to 350
2.) Add the coconut and craisins to your food processor to break up the craisins.
3.) Add everything else and blend it all up
4.) Use a scoop to place dough on a parchment sheet lined pan (they don't expand at all so don't worry about spacing.
5.) Bake for 15 minutes
There have been a great breakfast alternative to eggs or a perfect snack! And insanely easy!
